Here are the recipe details:

INGREDIENTS:

  • 2/3 cup water
  • 28g gelatine powder
  • 1/4 cup heavy cream
  • 2-3 tbsp honey (depending on how sweet you want them to be)
  • 250g canned pumpkin puree
  • 1/2 tsp salt
  • 1/2 tsp allspice or pumpkin spice (or 1/4 tsp cinnamon and 1/4 tsp nutmeg)

DIRECTIONS:

  • Add water to a saucepan and drizzle the gelatine powder on top. Let it sit for 5 minutes before stirring it over medium heat until the gelatine dissolves. You may start to see small bubbles, though it should NOT boil. The mixture may start to become a bit transparent. Remove from heat and let it cool slightly (for instance while you do the next few steps).
  • In a separate bowl, add pumpkin puree, heavy cream, and honey. If the honey is too thick, heat slightly until more liquid. I dipped it in hot water. You could also heat in a microwave or in a pot.
  • Add salt and allspice/pumpkin spice to the pumpkin mixture and mix well.
  • When the gelatine mixture has slightly cooled (at this point it’ll be quite transparent), combine it with the pumpkin mixture. Mix well, then pour it into a form. I used a cupcake form. You may also use a pie form and cut into pieces later.
  • Let it cool in the fridge for about 2 hours until firm. (It took only ~1 hour when using the cupcake form.)
